Potato Sujebi Recipe | Warm Up Your Body and Soul on a Rainy Day

Hello. I’m Melinda,

The rainy season of the USA has come, and it literally rained all day yesterday.

The good news is that the temperature has cool down a little bit.

And I start looking for a warm soup.

Potato Sujebi Recipe

  • 2 potato
  • flour
  • half teaspoon of salt
  • water
  • broth pack
  • 3g of anchovy
  • 3g of kelp
  • 120g of green pumpkin
  • 150g of onion
  • 70g of mushroom
  • 1 spoon of soy sauce
  • half teaspoon of garlic
  • half teaspoon of salt

Usually, I made a warm and hearty soup called “Sujebi” in the rainy season.

It is a soup that contains bite-sized dough with a lot of vegetables.

This is going to warm up your body and soul on a rainy day.

So, if you are ready, let’s get started!

Since I’m going to make a mixture using a potato, we have to slice the potato into a cube.

If you put a whole junk of potato, it would take a long time to cook.

Then, I’ll use a tripod to reduce the amount of moisture in the potato.

If there is too much water, it would stick to my hand all over when making the dough.

Boil them for 20 minutes on medium heat.

Afterward, poke them using a chopstick to make sure potatoes are done.

If they go through smoothly, you can take them out.

Since they are soft enough, crush them using a fork. Crush them into a fine piece.

Then, put them in the same amount of flour.

At this time, you have to use all-purpose flour.

Add a half teaspoon of salt and start kneading a dough.

The moisture inside a potato makes it possible to make a dough.

Then, add a bit of water inside.

I will use 50ml of water in total but don’t make them at once.

Slightly add water and knead a dough.

When they are done, put them in a bowl and let them rest for 2 hours.

While we are waiting for a dough, let’s make a broth.

Put 3g of anchovy and 3g of kelp inside a broth pack.

The reason why I am using a broth pack is to make a clear broth.

It would prevent any impurities floating on the surface of the water.

Put them in a pot and boil them for 15 minutes on medium heat.

Then, you will see that the color of broth has changed a bit.

It is slightly yellow.

It is a sign that broth is done.

Take the broth pack out of the water and leave it on the side.

Slice 120g of green pumpkin.

Cut them in a half and make them look like a half-moon.

Cut 150g of onion.

Slice 100g of potato.

Slice them as thin as possible, because potatoes usually take a long time to be done.

After 2 hours, remove the cotton on top, and check the dough.

You can see that it becomes so stretchy.

It is time to put a vegetable in a broth.

Put 70g of mushroom.

I bought a huge amount of mushroom before, so I have frozen them in a fridge.

And put the rest of the vegetables in a broth.

Then, the temperature of the broth goes down, because we put a lot of ingredients.

It will stop boiling.

You have to put dough immediately.

Separate them from dough into bite-size.

Stretch them from the dough and take them out into a thin layer.

Then, put 1 spoon of soy sauce, half teaspoon of garlic, and a half teaspoon of salt.

If it starts boiling again, stir them using a wooden spoon.

Let them simmer for 5 more minutes on medium heat.

And remove all the bubbles floating on the surface

You still have to put red chilies and spring onion in the end.

So, slice the good amount of it.

The spring onion is very fragile, and that’s why you have to put them 1 minute before you turn off the fire.

I feel cozy and warm whenever I eat this soup.
